I would love to know how to make the Church’s Chicken “COB” (chicken o breast) Sauce at home.?

Years ago at the Church’s Chicken near by, you could order what they called a “COB” which meant Chicken O Breast sandwich. It was a long hogie style bun with fried chicken strips and this sauce that was out of this world. I would love to know how to make this at home. I know it has mayo and jalapeno peppers ground up but I need to know the other stuff and how much of each.

    Jalapeno Mayonnaise:

    1/2 cup plus 2 tablespoons mayonnaise

    1 or 2 jalapeno pepper(s), stemmed, seeds removed and finely chopped

    1 teaspoon lime juice

    1/2 teaspoon minced garlic

    1/4 teaspoon salt

    1/8 teaspoon dried crushed oregano

    Place all of the ingredients in a small bowl and whisk to blend. Transfer to a clean container and refrigerate until ready to use or serve.

How To Make Church’s Chicken Copycat Breaded Chicken

    chicken drumsticks
  • 2
    plain yogurt

For Spiced Mixture:

  • 1
    brown sugar
  • 1
    garlic salt
  • 2
    chili powder
  • 1
    ground black pepper
  • 1
    smoked paprika
  • 1
    onion powder

For Breading:

  • ½
  • ½
    all-purpose flour
  • 1
  • ¼
  • vegetable oil

To Serve:

  • potato fries
  • barbecue sauce,
    or ranch, gravy, or any sauce of your choice


Spiced Mixture:

  1. Combine the brown sugar, garlic salt, chili powder, ground pepper, paprika, and onion powder. Set aside.

  2. Combine the yogurt and 1½ tablespoons of the spice mixture. Mix until evenly incorporated.

  3. Add the chicken into the prepared marinade. Coat each chicken.

  4. Cover and transfer to a chilled area. Allow to marinate for at least for 6 hours, best if overnight.


  1. Preheat the oven to 380 degrees F.

  2. Combine the flour, cornstarch, cornmeal, breadcrumbs, and 1 tablespoon of the spice mixture. Mix until evenly incorporated.

  3. Drain the drumsticks from the yogurt marinade and dab off any excess marinade.

  4. Coat the drumsticks into the breading mixture, shake off any excess, then layer them neatly onto a roasting tray lined with parchment.

  5. Fry the chicken in hot oil for roughly 6 to 8 minutes until golden brown. Arrange neatly onto a roasting tray.

  6. Transfer to the oven, and roast for roughly 30 minutes until the inside of the chicken is cooked.

  7. Before serving, season the chicken with the remaining spice mixture.

Recipe Notes

  • Out of breadcrumbs? Try making your own by simply cutting 4 ounces of bread into cubes. Crumble them in a food processor, then transfer them to a baking sheet. Bake them for 4 to 5 minutes in an oven at 300 degrees F, checking every 2 minutes to stir and let cook evenly. And voila, you have just enough breadcrumbs to use for our breaded chicken recipe.
  • For other breadcrumbs alternatives, you can use the same amount of panko, cracker, pretzel crumbs, crushed cornflakes or unsweetened cereals. Crush them in a large Ziploc bag or pulse them in a food processor to refine.
